Easy Slow Cooker Salsa Chicken for Busy Weeknights

The school year is back, and I have to admit—I’m ready for a routine! I love the relaxed pace of summer, but I do best when I have a schedule and know what to expect each week. Anyone else?

This year, I’m teaching 4th grade math and science after spending the last three years working with preschoolers. With a new schedule and busy afternoons, I know I have to be intentional about meal planning. That means remembering to take meat out of the freezer, prepping ingredients ahead of time, or turning on the slow cooker before I leave for work.

And, for some reason, the meat is always the most stressful part of dinner for me.

Maybe we only have beef on hand but I’m in the mood for chicken. Or I forgot to thaw the meat and suddenly it’s time to leave for sports practice. Whatever the roadblock, I can quickly get into the mindset that if I don’t have the “right” meat ready, I can’t make a proper dinner.

When time is limited and kids are hungry, that can turn into dinner-time panic pretty quickly!

So I’ve started making a big batch of slow cooker salsa chicken for Sunday dinner and using it in different meals throughout the week. It’s one of those simple meal-prep strategies that saves me time without requiring me to eat the same dinner every night.

Why I Love This Slow Cooker Salsa Chicken

How to Use Salsa Chicken Throughout the Week

Our family loves tacos, fajitas, and burrito bowls, so I know this chicken can be used in several different ways.

Try serving it with:

  • Rice and beans for burrito bowls
  • Taco salad or a taco shell salad bowl
  • Nachos with cheese and your favorite toppings
  • Fajita vegetables and tortillas
  • Lettuce, tomatoes, avocado, and other taco toppings

This is also a great opportunity to take advantage of foods your kids already enjoy.

When you have a flavor or texture your child considers a “safe” food, incorporating it into different meals can make family meals feel less stressful. You don't have to reinvent dinner every night. Sometimes taking a familiar food and serving it in a slightly different way is enough variety.

Add Frozen Vegetables for an Even Easier Dinner

One of my favorite shortcuts is keeping a bag of frozen fajita vegetables in the freezer.

Frozen bell pepper and onion strips can be sautéed on the stovetop according to the package directions and are usually ready in less than 10 minutes. You can season them however your family likes and have a vegetable side ready with very little effort.

Frozen fruits and vegetables can also be a convenient and budget-friendly way to keep produce on hand. Because they’re frozen soon after harvesting, frozen produce can retain many of the same nutrients as fresh produce.

And perhaps most importantly for busy families, you don't have to worry about it spoiling in the refrigerator before you get around to eating it!

Chicken Thighs or Chicken Breasts?

For this recipe, I prefer boneless, skinless chicken thighs.

Chicken thighs tend to stay moist during slow cooking and reheat well without becoming as dry or chewy as chicken breast can sometimes become. They’re also often less expensive than chicken breasts.

If your family prefers chicken breast, you can absolutely use it instead. Just be mindful not to overcook it, since chicken breast is leaner and can dry out more easily.

Make This Chicken Your Own

The beauty of this recipe is that the salsa does most of the flavoring for you.

Choose a salsa that your family already enjoys:

  • Mild salsa for a kid-friendly option
  • Spicy salsa for more heat
  • Red salsa for a traditional taco flavor
  • Green salsa for a different flavor profile

You can also adjust the seasonings to suit your family.

Want to stretch the recipe even further? Stir in one or two cans of rinsed black beans after the chicken has finished cooking and has been shredded. The beans add fiber and additional protein while helping the chicken stretch into even more servings.

Slow Cooker Salsa Chicken Ingredients

  • 2–3 pounds boneless, skinless chicken thighs
  • 1 (16-ounce) jar of your favorite salsa
  • 1 teaspoon garlic salt
  • ½ teaspoon cumin
  • ½ teaspoon paprika

How to Make Slow Cooker Salsa Chicken

  1. Add the chicken. Place the chicken thighs in your slow cooker.
  2. Season the chicken. Sprinkle the garlic salt, cumin, and paprika over the chicken, coating as evenly as possible.
  3. Add the salsa. Pour the salsa over the chicken and toss to coat.
  4. Cook. Cover and cook on low for 6–8 hours or high for about 4 hours, until the chicken is cooked through and tender.
  5. Shred the chicken. Remove the chicken and shred it with two forks. Return the shredded chicken to the slow cooker and stir it into the cooking liquid.
  6. Serve or save for later. Serve immediately or refrigerate the chicken for another meal.

Always check that the chicken has reached a safe internal temperature of 165°F before serving.

Set out a variety of toppings and let everyone build their own meal. Some of our favorites include:

  • Bell peppers and onions
  • Guacamole or sliced avocado
  • Shredded cheese

I love this approach because everyone can make their meal a little differently. One child might want chicken and cheese in a tortilla, while another wants a burrito bowl loaded with vegetables and beans.

Meal Prep Tip: Cook Once, Eat All Week

Instead of trying to come up with and cook a completely different protein every night, make a large batch once and portion it out for several meals. You can even freeze some of the cooked chicken for a future busy week.

A little planning on Sunday can make those hectic weeknights feel much more manageable—and when the kids are hungry and you have to leave for practice in 30 minutes, having dinner mostly ready can make all the difference!
