Popsicles are a timeless symbol of summertime. Push-Up Pops… Creamsicles… Everyone has their favorites! But too often popsicles are full of dyes, artificial sugar and other mystery ingredients that leave our kiddos with a sugar crash. Homemade popsicles are a fun “snack-tivity” to sneak some summer fruits and veggies into our children. My boys love these creamy Pop-Eye Popsicles that are loaded with frozen pineapple, strawberries, peaches, mango and of course spinach! You can vary the fruits to create new flavor combinations, all while creating a cool and refreshing snack that is loaded with vitamins. Apple juice with spinach and pineapple? Almond milk with chocolate protein powder and raspberries? Encourage your tiny chefs to create new recipes and name them after a favorite superhero or beloved character. Cranberry juice with pureed carrots and whole blueberries inside? Captain Amerisicle! Get creative and make some summertime memories as a family!
Ingredients:
- 1 orange peeled
- 1/2 cup orange juice
- 1 cup vanilla almond milk
- 2 cups of frozen tropical fruits (mango, pineapple, strawberries)
- 2 cups fresh spinach
Directions:
- In a high powered blender, combine all ingredients and mix until completely smooth. Spinach blends best if put in first.
- Pour the mixture into a popsicle mold. Insert a popsicle stick and put into the freezer for a minimum of 4 hours.
