Healthy Cheesy Gordita Crunch Recipe: A Family-Friendly Taco Night Favorite

Healthy cheesy gordita tacos with ground turkey, black beans, spinach , cheese and taco toppings

If your family loves Taco Bell's Cheesy Gordita Crunch, you're going to want to try this homemade version! It has all the good stuff—a crunchy taco shell, soft cheesy tortilla and creamy ranch drizzle—with a few simple additions that make it a satisfying family dinner.

We use ground chicken or turkey, black beans and spinach in the filling, then let everyone choose their own toppings. It's one of those meals that feels fun and familiar for kids while giving parents an easy way to add protein, fiber and vegetables.

And the best part? Everyone gets to build their taco exactly how they like it!

Why You'll Love This Healthy Cheesy Gordita Crunch

This recipe is one of those family dinners that checks a lot of boxes:

  • It's kid-friendly. Crunchy shells, melted cheese and ranch are a pretty hard combination to beat!
  • It's satisfying. Ground meat and black beans provide protein, while the beans also add fiber.
  • It's an easy way to offer vegetables. Frozen spinach cooks right into the taco filling without dramatically changing the flavor.
  • Everyone can customize their own taco. Put out a variety of toppings and let everyone choose what they want.
  • It's easy to adapt. You can make these gluten-free or dairy-free depending on your family's needs.
  • It's a fun family meal. Kids can help assemble their tacos and enjoy the same meal as everyone else.

Why I Love Using Restaurant Favorites as Inspiration

I have a question for all the parents…are kids ever NOT hungry?!

I feel like we are in the stage of life where my kids are starving all the time. Just when I think I've made a dinner big enough to have lunch leftovers, we eat everything down to the last crumb!

So I'm always looking for dinner ideas that will keep my kids satisfied while also helping us get a variety of foods and important nutrients throughout the day.

One strategy I love for introducing new meals is to take inspiration from your favorite restaurants. You don't have to completely reinvent dinner to make it a little more nourishing or to introduce new foods. Start with something your family already loves and build from there.

We make some delicious chicken sandwiches in our house that could probably put Chick-fil-A out of business!

For our family, Mexican-inspired food is always a winner—especially tacos.

That's where this homemade Cheesy Gordita Crunch comes in.

A Healthier Take on Taco Bell's Cheesy Gordita Crunch

Taco Bell might taste good in the moment, but I don't always feel so great afterward. So rather than trying to recreate the fast-food version exactly, we use it as inspiration and make our own version at home.

The original Cheesy Gordita Crunch has a combination that is hard to resist: a crunchy taco shell wrapped in a soft tortilla with melted cheese, seasoned ground beef, lettuce, tomatoes and spicy ranch.

I'm not gonna lie…the flavors are amazing together!

The double shells make it extra satisfying, the meat tastes fabulous with ranch, and they're just the right size.

Our version keeps all of those fun flavors and textures, but we make a few simple changes that work well for our family. We use ground chicken or turkey, add black beans and spinach to the filling, and put out a variety of toppings so everyone can customize their tacos.

How to Make a More Nourishing Cheesy Gordita Crunch

Add Black Beans for Protein and Fiber

Any ground meat will work in this recipe, so instead of beef, try chicken or turkey. Both are great sources of protein and work really well with taco seasoning.

I prefer to add a can of black beans directly into the ground meat. Beans add fiber and plant-based protein, and they help stretch the taco filling so there's plenty to go around when everyone is extra hungry.

Plus, beans taste great in tacos!

Adding beans to the filling is also an easy way to make the recipe go a little further when you're feeding a hungry family.

Make Vegetables Part of the Main Dish

Rather than topping my ground meat with shredded iceberg lettuce, I prefer to cook frozen spinach right into the filling.

Not all of my kids like the taste or texture of lettuce, but they don't seem to notice when I add spinach to the taco mixture.

Spinach provides iron, folate, vitamin A, vitamin C and other important nutrients, making it an easy addition to this family favorite.

And while I don't think vegetables need to be hidden from kids, incorporating them into a meal your family already enjoys can be a simple way to offer more variety.

Don't Forget the Ranch!

One of my sons is very sensitive to spicy flavors, so we prefer to use our favorite ranch dressing from Primal Kitchen.

It's made with avocado oil and has the best flavor! My middle son would eat it on everything if we let him!

The ranch is one of those ingredients that really brings the whole taco together, especially if your family isn't a fan of spicy foods.

Get Creative With Your Toppings

Diced tomatoes are a great topping, but have you tried sautéed mushrooms? Grilled onions? Roasted bell pepper strips? Guacamole?

Your possibilities are endless when you're the chef!

I love putting several toppings on the table and letting everyone choose what they want on their taco. This allows everyone to customize their meal while still sitting down to the same family dinner.

And you never know which topping might become a new favorite!

Make It Dairy-Free

Have a dairy allergy in your household? Use your favorite dairy-free shredded cheese between the crunchy and soft shells to make your dinner work for your family.

Not a fan of cheese at all? Try spreading refried beans between the shells instead. They help hold the two shells together while adding another source of fiber and plant-based protein.

Make It Gluten-Free

One of the best parts about the double-shell taco is that it's easy to modify for gluten-free eaters.

Instead of wrapping the crunchy taco shell in a flour tortilla, use a corn tortilla. You can also try one of the many gluten-free tortilla options available, such as cassava, chickpea or almond flour tortillas, from brands, such as Siete.

Just be sure to check labels for your family's specific allergy or dietary needs.

How to Make Cheesy Gordita Crunch Tacos Kid-Friendly

I love knowing that young, adventurous eaters can enjoy this meal right alongside the rest of the family.

You don't have to make a completely separate meal for your youngest eater. Instead, you can serve some of the taco components separately and let your child decide what they want to explore.

For younger eaters who are developmentally ready for these foods, you might offer:

  • Ground meat and beans
  • Soft tortilla pieces
  • Shredded cheese
  • Avocado or guacamole
  • Cooked vegetables
  • Tomato
  • Other familiar foods your child enjoys

You can also let older kids help assemble their own tacos. Giving kids some ownership over their meal can make family dinner more fun without turning it into a negotiation.

When kids see their parents and siblings enjoying a variety of foods, they're getting valuable exposure to those foods without needing to be pressured to eat them.

And remember: your child doesn't have to eat every ingredient for the meal to be successful. Offering a familiar food alongside less familiar foods gives kids the opportunity to explore new tastes and textures at their own pace.

Ingredients

For the Taco Filling

  • 1 lb ground chicken or turkey
  • 1 (15 oz) can black beans, drained and rinsed
  • ⅓ cup frozen spinach
  • 1 packet taco seasoning
  • ⅓ cup water

Directions

  1. Prepare the taco filling. Heat a large skillet over medium-high heat. Add the ground chicken or turkey and cook until browned and no longer pink. Stir in the black beans, frozen spinach, taco seasoning and water. Cook according to the directions on the taco seasoning packet.

Tips for the Best Cheesy Gordita Crunch

Don't Overfill the Tacos

The double shell is already pretty substantial, so start with a moderate amount of filling and add more as needed.

Serve Them Right Away

The crunchy shell will soften over time, so these are best enjoyed soon after assembling.

Make the Filling Ahead

The meat, bean and spinach mixture can be prepared ahead of time and stored in the refrigerator. Reheat it before assembling your tacos for an even easier weeknight dinner.

Set Up a Taco Bar

Put all of the toppings in separate bowls and let everyone customize their own taco. This is especially fun for kids!

Serve the Components Separately for Younger Eaters

You don't have to serve the entire taco assembled. Let your child's developmental stage and eating skills guide how you serve the different ingredients.
