It's Beginning to Look a Lot like Christmas Break
I love making space for special breakfasts on the weekend! Sausage balls, breakfast tacos, banana pancakes… all the amazing foods my family loves but doesn’t have time to make or enjoy on a school day. Christmas Break is a great time to live low and slow and enjoy a lazy morning. Sleep in late, start the coffee, and get your kids involved in a fun breakfast! If I get to choose, I’ll pick French Toast over pancakes every time! The bread is like a sponge of maple syrup and the milk and egg batter adds in some much needed protein. I always have the ingredients on hand so it’s easy to whip up a batch in no time! You can use a thicker bread like Brioche or a gluten free option to keep things allergy friendly. Any kind of milk will work (whole, almond, coconut, etc), but remember: the higher the fat content, the creamier the batter will be. I like adding a little bit of flour to the batter to thicken it up, adding an extra crispy layer as it cooks. If substituting coconut flour as a gluten free option, remember that you’ll only need a quarter of the amount of coconut flour. It adds a fabulous flavor to the batter, but is much more absorbent than white flour.
Festive French Toast Recipe
Ingredients:
- 4 eggs
- ¾ cup milk
- ¼ cup flour
- ¼ cup sugar
- 1 tsp vanilla
- ½ tsp cinnamon
- ¼ tsp salt
- 8 slices of bread
Directions:

Warm pan over medium heat or preheat griddle to 350 degrees F.

In a large bowl, combine eggs, milk, flour, sugar, vanilla, cinnamon and salt.

Whisk until mixed evenly.

Dip sliced bread into the mixture, making sure each piece is evenly submerged.

Place on a hot, greased pan or griddle.Cook for 3-4 minutes per side or until golden brown.

Flip and repeat.Serve warm on a plate with maple syrup, sliced fruit and chopped pecans.
