Baked Turkey Veggie Meatballs with Carrots and Spinach (Kid-Approved!)

Baked Turkey and Vegetable Meatballs

Why We Love These Baked Veggie Meatballs

I’m not sure what it is about meatballs, but my kids love them. Whether they’re served with spaghetti, rice bowls, sub sandwiches, or even just on a toothpick for dipping—our boys devour them every time. And I’m not complaining! Meatballs are an easy win in our house.

They’re such a great way to sneak in extra veggies, herbs, and lean protein without complaints. Plus, you can prep them ahead and freeze, or whip them up fresh and toss them in the oven while the rest of dinner comes together. That’s a major win on busy weeknights.

A Simple, Healthy Dinner the Whole Family Will Eat

These turkey (or chicken) meatballs are packed with fresh spinach and carrots, seasoned just right, and baked until golden. They’re juicy, flavorful, and freezer-friendly—which means you can double the batch and save time later.

Serve them with pasta and sauce, over mashed potatoes, tucked into a lunchbox, or just as-is with your favorite dip. However you plate them, they’re a protein-and-veggie combo you’ll feel good about feeding your family.

Here’s what you’ll need to make these easy and nourishing meatballs:

  • 1 lb ground turkey or chicken

  • 1 egg

  • 1 small yellow onion, diced small

  • ¼ cup grated carrots

  • 1 packed cup fresh spinach, finely chopped

  • 1 tsp garlic powder

  • ½ tsp dried basil

How to Make Veggie-Packed Turkey Meatballs

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.

  2. Mix the ingredients. In a large bowl, combine the ground meat, egg, onion, carrots, spinach, and seasonings. Mix until evenly combined (your hands work best for this).

  3. Form into meatballs. Use a cookie scoop or your hands to shape into 1- to 2-inch balls. Place them on the prepared baking sheet about an inch apart.

  4. Bake. Pop them in the oven for 25 minutes, or until they’re golden brown on the outside and cooked through.

  5. Serve and enjoy! Pair with your favorite side or sauce.

Tips for Easy Family Meals with Meatballs

  • Double the batch and freeze half. These freeze beautifully—just reheat in the oven or air fryer when you’re ready.
  • Switch up the protein. Ground turkey and chicken both work great.
  • Make it a meal. Serve over pasta, rice, mashed potatoes, or tucked into wraps.
  • Let the kids help. Scooping and rolling the meatballs is a fun job for little hands.
  • Adjust for all ages. For older babies and toddlers, quarter the meatballs.
